More than ever, we are engaged today in the ancient question of the union of opposites, of “art,” as it was called by the chronicler Ph. Bronner in 1834 in alchemical tradition. How do we create a respectful relationship with nature? How do we transform Röttgen into wine, wild boar and turnip into delicacies? Existential questions in the age of food design, which we love to discuss – while we let our senses be enchanted.
