Mosel tapas: Frothy Riesling soup

Ingredients frothy Riesling soup:

  • 100 g onions
  • 1 tbsp butter
  • 125 ml dry Riesling
  • 500 ml vegetable stock
  • 2 tbsp sour cream
  • 2 tbsp plain flour
  • 125 ml single cream
  • Salt
  • Pepper
  • Chives to garnish

Preparation frothy Riesling soup:

  1. Peel the onions and cut them into fine pieces. Sauté them lightly in a pan using the butter. Deglaze with the Riesling.
  2. Then add the vegetable stock and the sour cream. Mix the flour and single cream together and add this also.
  3. Simmer gently for 15 minutes. Season with salt and pepper.
  4. Now finely purée the soup, which creates a delicious foam, and pour it into bowls.
  5. Wash the chives and use as garnish for the soup.
