Mosel tapas: Lambs lettuce salad with potato dressing

Ingredients lambs lettuce salad with potato dressing:

  • 200 g lambs lettuce
  • 1 bunch of radishes
  • 2 shallots
  • 2 medium-sized waxy potatoes
  • 2 tbsp oil
  • 200 ml vegetable stock
  • 6 tbsp white wine vinegar
  • 1 tbsp mustard
  • Salt
  • Pepper
  • Chives

Preparation lambs lettuce salad with potato dressing:

  1. Wash the lambs lettuce and radishes. If needed, cut the radishes into quarters.
  2. For the dressing, peel the potatoes and shallots, finely dice them and sauté in hot oil for one minute.
  3. Pour in the vegetable stock, bring to a boil and simmer for 10 minutes.
  4. Now stir in the white wine vinegar and mustard. Season with salt and pepper and then use a hand blender to create a fine purée.
  5. Cut the chives into little pieces and stir them in.
