Culinary flagship: Restaurant Dopamin Fine Dining
The host family Boesen draws on years of experience in hospitality and sets a new highlight in the Saar-Hunsrück region with Villa Keller. In the lovingly restored, listed villa from the year 1801, historical heritage and modern design come together to create a unique boutique hotel – with a direct view of the medieval Saarburg Castle and the Saar River.

The family's touch is also evident in the culinary offerings. In Restaurant Dopamin Fine Dining, Axel Boesen, brother of host Niko Boesen, has been responsible since September for a menu concept that presents regional products in a new light. His cuisine combines the flavors of the Saar-Hunsrück region with Nordic-Asian influences and focuses on lightness and precision. This creates a fine dining experience that consciously stands apart from classical formats and redefines enjoyment in a modern way.
The experienced chef, who has gained his expertise in international star gastronomy in Germany, Spain, and Switzerland, creates exceptional dishes that tell stories and engage all senses. “Each course triggers surprise, anticipation, reward – three dopamine hits per bite," the family describes the culinary concept of their fine dining restaurant.
Diverse enjoyment formats for every occasion
The restaurant Dopamin offers various culinary experiences:
Chef's Table (7-course menu): The heart of the restaurant is the exclusive Chef's Table, where up to eight guests can directly participate in the culinary happenings. Start is at 7:00 p.m. Here, fine dining becomes an interactive experience – communicative, lively, and unforgettable.
Business Lunch (3 courses): On Fridays from 12:00 p.m. to 3:00 p.m., guests can enjoy a changing 3-course menu – perfect for an upscale lunch with business partners or a stylish lunch break.
Schnitzel & Champagne: Every Wednesday evening from 6:30 p.m., the restaurant offers a hand-crafted Vienna schnitzel as a special à la carte offering – rustic enjoyment meets elegant atmosphere.
The regular menu includes 4-, 6-, or 7-course menus served from Wednesday to Saturday starting at 6:30 p.m. Our sommelier curates an exceptional wine selection focusing on the best Rieslings from the Saar and Mosel – wines from producers who still cultivate their steep vineyards traditionally by hand.
Dopamin Fine Dining - Star cuisine at the Saar - awarded a Michelin star and the Young Chef Award
Great success for the gastronomy in Saarburg: Axel Boesen, head chef of the restaurant Dopamin, has been awarded a Michelin star by the Guide Michelin. Furthermore, the ambitious top chef received the prestigious Young Chef Award, which honors exceptional young talents in gastronomy.
With creativity, artisanal precision, and a modern, regionally influenced cuisine, Axel Boesen has quickly established an excellent reputation. The dual award not only underlines his extraordinary achievement but also strengthens the culinary appeal of the holiday region Saar-Obermosel.
